  • Vinegar or soy sauce — optional

Instructions

  1. Make the dough. Mix flour and salt. Make a well, add the egg, water, and oil. Knead into a stiff, smooth dough. Wrap in plastic and rest for 30 minutes.

  2. Prepare the filling. Grate or finely chop the onion. Mix with both ground meats, minced garlic, salt, pepper, and coriander. Mix well until uniform.

  3. Roll and shape. Divide the dough into 2–3 parts. Roll each into a thin sheet (about 2 mm thick). Cut out circles using a glass or a round cutter (about 5–6 cm diameter).

  4. Fill the pelmeni. Place 1 teaspoon of filling in the center of each circle. Fold in half into a crescent, pinch the edges firmly. Then join the two corners to form the classic pelmeni shape.

  5. Cook. Bring a large pot of salted water to a boil. Drop in pelmeni in batches. They’re done when they float to the surface, plus 2 more minutes (about 5–7 minutes total).

  6. Serve. Drain well. Toss with a knob of butter to prevent sticking. Serve hot with sour cream, fresh dill, and a splash of vinegar or soy sauce.

TIP

Make a double batch and freeze the extras! Freeze pelmeni in a single layer on a tray, then transfer to a bag. Cook from frozen — just add 2 extra minutes.
