Instructions

  1. Prepare the dough. Dissolve yeast and sugar in warm water, let sit for 5–10 minutes until foamy. Mix flour and salt, add yeast mixture and olive oil. Knead for 8–10 minutes until smooth. Cover and let rise for 1 hour.

  2. Make the sauce. Crush the garlic and mix with passata, oregano, salt, and a drizzle of olive oil.

  3. Preheat the oven. Set your oven to the highest setting — 250°C (480°F) or higher. If you have a pizza stone, place it inside to heat.

  4. Shape the pizza. Divide dough in half. Stretch each piece into a thin round or rectangle on a floured surface. Transfer to a floured baking sheet or pizza peel.

  5. Assemble. Spread a thin layer of sauce. Distribute the cheeses evenly: mozzarella pieces, gorgonzola crumbles, parmesan shavings, and fontina slices.

  6. Bake. Bake for 8–12 minutes until the crust is golden and the cheese is bubbling and slightly browned.

  7. Finish. Top with fresh basil leaves, a drizzle of olive oil, and a pinch of flaky salt. Slice and serve immediately.
